Creamy, rich and oh so chocolaty!
This delicious pudding is very easy & fun to make! One minute you’re whisking runny chocolate milk and the next magic happens and it thickens to a creamy consistency!
Chocolate Pudding Recipe
for 2-3 servings
Ingredients:
- Cocoa powder 4 tbsp
- Cornstarch 3 tbsp
- A pinch of salt
- Instant Coffee 1 tsp
- Sugar 3 tbsp
- Warm milk 2 cups
- Dark chocolate (I used 72%) 1 oz or around 30 gr
- Vanilla Extract 1 tsp
- Unsalted butter 1 tbsp
Instructions:
- Heat milk until it is simmering
- In the meantime, sift cocoa powder, cornstarch, sugar, instant coffee and salt in a bowl
- Gradually add heated milk and whisk until there are no lumps
- Pour the mixture into a saucepan and cook on low heat, whisking constantly for about 5 minutes
- When the mixture is starting to thicken, add dark chocolate
- keep whisking until thick and almost boiling (you see the bubbles on the surface), then take off the heat and add vanilla & butter. (If you heat the milk first and add it slowly to the dry ingredients it will be a smooth mixture. But if by any chance your pudding has lots of lumps, strain it before adding vanilla and butter.)
- Pour the pudding into your desired cups or bowls.
- Cover with plastic wrap and place it directly over the pudding surface to prevent a skin from forming on top.
- Refrigerate for about 4 hours until set or you can enjoy it warm especially in the wintertime!
Add some fresh fruit, more chocolate or whipped cream if you like!
