These chocolate cupcakes are super flavorful and moist and are topped with a perfect fluffy vanilla buttercream frosting! They are ready in less than an hour and are perfect for every occasion! (Not that we need an excuse to have a chocolate cupcake! 😋)
The Perfect Chocolate Cupcakes with Vanilla Frosting
Yields: 6-7 Cupcakes
Ingredients:
- 1⁄2 cup all-purpose flour
- 1⁄4 cup cocoa powder
- 1⁄8 tsp of salt
- 1 tsp baking powder
- 1⁄4 tsp instant coffee powder
- 6 tbsp Sugar
- 1⁄4 cup unsalted butter at room temperature
- 1 egg at room temperature
- 1 tsp vanilla extract
- 1⁄2 cup milk, you can use whole milk or 2 percent
- 1⁄4 cup of your favorite dark chocolate, cut into small chunks (I used 72 percent chocolate)
Instructions:
- Preheat the oven to 350 F and line a cupcake pan with cupcake liners.
- Whisk flour, cocoa powder, baking powder, salt and instant coffee powder in a bowl and set aside.
- Beat the butter and sugar with an electric mixer for about 3 minutes (scrape the bowl with a spatula halfway through) until light and fluffy.
- Add the egg and vanilla and beat until it is incorporated. (about 1 minute)
- Now add the dry ingredients along with the milk and mix for a few seconds until just combined. Do not over mix the batter.
- Add the chocolate chunks and fold them into the batter.
- Fill about 1/2 to 2/3 of cupcake liners with the batter.
- Bake for about 15-20 minutes or until a toothpick comes out clean.
- Let the cupcakes cool down completely on a cooling rack.
- You can decorate them with my favorite Vanilla Buttercream Frosting that is so simple yet so delicious!
These cupcakes are also amazing on their own and without any frosting! They’re perfect for breakfasts or an afternoon snack. 😊
