Chocolate chia seed pudding is a vegan and gluten free dessert, breakfast or even snack! It’s naturally sweetened and is packed with Omega-3 and fiber. I paired it with peanut butter and raspberries, but you can totally experiment with different toppings and fruits.
Ingredients:
serves: 2-3
- 1/4 cup chia seeds
- 2 tbsp cocoa powder
- 1/4 tsp salt
- 1/2 tsp instant coffee granules
- 2 tbsp maple syrup or honey for non-vegan version
- 1 tsp vanilla extract
- 1 cup milk alternative of your choice, I used cashew milk
- 2 tablespoons creamy natural peanut butter
Instructions:
- Sift the cocoa powder in a bowl and add all the ingredients and whisk together. Refrigerate 30 minutes, then whisk it again. You can taste the pudding and add more sweetener if you’d like.
- Cover and refrigerate overnight for the best result or at least 4 hours.
- Serve with raspberries, chocolate chunks, peanuts, or more peanut butter. You can get creative and use whatever topping or fruit you would like.
