Apple Loaf Cake with Maple Glaze
This classic apple cake is easy to make and so delicious! Flavored with cinnamon and topped with maple glaze, it's the perfect treat for fall season or any occasion.
Ingredients
For the Cake:
- 2 small apples, preferably gala - peeled and chopped into cubes
- 3 tablespoons brown sugar
- 2 teaspoons ground cinnamon
- ½ cup unsalted butter, at room temperature - 113 grams
- ½ cup granulated sugar - 100 grams
- 2 large eggs - at room temperature
- 1½ teaspoon vanilla extract
- 1½ cup all-purpose flour - 180 grams
- 1½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup milk - at room temperature
For the Maple Glaze:
- 1 tablespoon unsalted butter
- 2 tablespoons maple syrup - 40 grams, at room temperature
- ¼ teaspoon maple extract
- ½ cup powdered sugar - 60 grams
- ⅛ teaspoon ground cinnamon
- pinch of salt
Instructions
Make the Cake:
- Preheat the oven to 350°F. Grease and line a 8.5 by 4.5 inch loaf pan.
- In a bowl, whisk flour, salt and baking powder. Set aside.
- In a bowl, add in the chopped apples, cinnamon and brown sugar. Mix to combine and set aside.
- Beat softened butter and sugar in a bowl for about 3 minutes or until it's fluffy and creamy.
- Add the eggs one at a time, mixing well after each addition (about 30 seconds). Scrape the sides of bowl to make sure everything is combined. Add vanilla extract and mix.
- Reduce the speed to low, mix in the dry ingredients in 3 parts, alternating with milk. Start and finish with the dry ingredients. Do not overmix. Fold in the apples, discard the liquid.
- Bake in the preheated oven for about 50 minutes. Keep checking it after 40 minutes. Let the cake cool down completely.
Prepare the Glaze:
- In a microwave safe bowl, place the butter and microwave until melted. Add in maple syrup and maple extract and whisk to combine. Add in powdered sugar, salt and cinnamon and whisk until smooth.
- Pour or drizzle the glaze over the cake. The glaze will harden slightly once set.
