Start your day with this warm and cozy oatmeal topped with sauteed apples and lots of cinnamon, made in just 15 minutes!
Ingredients:
serves: 2
- 1 cup old fashioned oats
- 1 cup cashew milk (or any milk you have on hand)
- 1 cup water
- Pinch of salt
- 1 tsp cinnamon
- 1 tbsp brown sugar
- 1 tbsp unsalted butter
- 1 medium crisp apple, diced
- Optional toppings: honey or maple syrup, peanut butter
Instructions:
- In a medium saucepan, add milk and water with a pinch of salt and let it come to boil on medium high heat.
- Meanwhile, melt the butter on medium heat in a pan or saucepan. Add diced apples, brown sugar and a sprinkle of cinnamon. Stir and let it cook for about 5-10 minutes until the apples are tender.
3. When the milk and water comes to a boil, add in the oats and let it simmer on medium low for about 10 minutes. Stir occasionally and let it cook until the liquid is mostly absorbed. Add a teaspoon of cinnamon, and 1/3 of caramelized apples (optional), stir and take it off the heat.
4. Divide the oatmeal in two bowls and top with the remaining apples. You can also drizzle some honey or maple syrup on top. It also pairs well with peanut butter.
