Easy Peach Crisp Recipe
This easy peach crisp is made of a juicy layer of peaches, topped with an amazing cinnamon oat topping.
Ingredients
Filling:
- 1½ pounds fresh peaches, peeled and sliced - about 5 medium peaches
- 3 teaspoons lemon juice
- ¼ cup granulated sugar - 50 grams
- ½ teaspoon vanilla extract
- 1 tablespoon cornstarch
- ½ teaspoon ground cinnamon
Topping:
- ¼ cup brown sugar - 50 grams
- ¼ cup unsalted butter, soft - 56 grams
- ½ cup old-fashioned oats - 50 grams
- ¼ cup all purpose flour - 30 grams
- ½ teaspoon ground cinnamon
- ⅛ teaspoon salt
- vanilla ice cream for serving - Optional
Instructions
- Preheat the oven to 350°F (177°C) and grease a 1 quart baking dish with butter and set aside. I used a 9-inch pie pan.
- Prepare the filling: In a large bowl add in sliced peaches, lemon juice, vanilla extract, sugar, cinnamon and cornstarch. Mix until combined and transfer to the prepared baking dish. Set aside.
- Make the topping: In a bowl, mix together the flour, oats, salt, cinnamon and brown sugar. Then add in soft butter and mix with a spoon or your hands until the mixture is crumbly.
- Sprinkle the topping evenly on top of the peaches.
- Bake: bake in the preheated oven for about 35-40 minutes, until the filling is bubbling and the top is golden brown. Let it cool down on a wire rack for about 15 minutes. Serve warm or cold with a scoop of vanilla ice cream on the side.
