These soft and chewy chocolate chip cookies have a rich peanut butter flavor. They are not too sweet, just enough, super easy to make and no chill time necessary!
Peanut Butter Chocolate Chip Cookies
Ingredients
- ½ cup unsalted butter, at room temperature - 113 grams
- ½ cup creamy peanut butter (not natural), at room temperature - 134 grams
- ½ cup light brown sugar - 100 grams
- ¼ cup granulated sugar - 50 grams
- 1 large egg - at room temperature
- 1 teaspoon vanilla extract
- 1 cup + 2 tablespoons all purpose flour - 135 grams
- 1 teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- ⅛ teaspoon ground cinnamon
- 3 ounces semi-sweet or dark mini chocolate chips - ½ cup or 85 grams
Instructions
- Preheat the oven to 350°F (177°C). Line a baking sheet with parchment paper and set aside.
- Whisk the flour, baking soda, baking powder, cinnamon and salt together in a bowl, and set aside.
- In a large bowl, add room temperature butter and peanut butter and beat until smooth and combined.
- Add in brown sugar and granulated sugar and beat on medium for about 3 minutes. Make sure to scrape the sides of the bowl in between mixing to get all the ingredients incorporated. After 3 minutes of beating, butter and sugar will become fluffy and lighter in color.
- Add the egg and vanilla extract, mix until incorporated.
- Add in the dry ingredients, mix on low until the flour is just combined. It's ok if you still see traces of flour left, we'll fold those in with chocolate later on.
- Fold in the chocolate chips with a wooden spoon or a spatula.
- With a cookie scoop or a spoon, scoop the cookies on the parchment paper. Press the tops slightly, this will help the cookies spread more. Make sure to leave enough room between the cookies because they spread while baking.
- Bake in the preheated oven for 9 minutes, until they are a little golden around the edges but still soft and under baked in the middle. You can press a few more chocolate chips on top while still hot.
- Let them cool down on the baking sheet for 15 minutes and enjoy!
