Vegan TLT Sandwich with Tempeh
This delicious vegan sandwich is made with soy marinated tempeh slices, hummus, fresh tomatoes and lettuce. It's smoky, super easy to make and it tastes incredible.
Ingredients
Tempeh marinade
- 1 block tempeh - 8 oz. or 227 grams, This is the brand I use
- 2 tablespoons olive oil, plus more for the pan
- ¼ cup less sodium soy sauce -
- 2 teaspoons liquid smoke - this is the brand I use
- 1 tablespoon apple cider vinegar
- ½ tablespoon balsamic vinegar
- 1 tablespoon maple syrup
- 1 teaspoon garlic powder
Sandwich
- tomato slices
- lettuce
- hummus or vegan mayonnaise
- slices of your favorite bread, I love sourdough and rye bread for this sandwich
Instructions
- Cut tempeh into ¼ inch (6 mm) slices and place in a shallow dish.
- In a small bowl, add in soy sauce, olive oil, apple cider and balsamic vinegar, liquid smoke, maple syrup and garlic powder. Whisk to combine and pour over the tempeh slices. Cover with plastic wrap and refrigerate for 30 minutes or overnight. I usually go for 1-2 hours.
- When tempeh slices are done marinating, place a pan over medium heat. Drizzle a little olive oil in the pan and once hot, add in the slices. You may need to do this in batches. Cook them until both sides are brown about 2-3 minutes on each side.
- To assemble the TLT, spread some hummus, vegan mayo or even guacamole on a toast, place a few tempeh slices on top, followed by tomato slices and lettuce. Top with another toast and enjoy.
