If you are a fan of banana bread, you are going to love these pancakes! They’re fluffy, soft, delicious, and easy to make. I love topping them with some chopped pecans or sliced bananas and of course maple syrup. It’s just the perfect way to start your day!
Banana Chocolate Chip Pancakes
Ingredients
- 1 cup all purpose flour - 120 grams
- ½ teaspoon salt
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon ground cinnamon
- 1 medium very ripe banana, mashed - about 120 grams
- 1 large egg
- 3 tablespoons light brown sugar - 30 grams
- 1 teaspoon vanilla extract
- 3 tablespoons unsalted butter, melted and cooled down slightly - 42 grams
- ¾ cup whole milk
- ⅓ cup mini chocolate chips
Instructions
- In a small bowl, add in flour, salt, baking powder, baking soda and cinnamon. Use a fork or whisk to combine. Set aside.1 cup all purpose flour, ½ teaspoon salt, 1 teaspoon baking powder, ¼ teaspoon baking soda, ½ teaspoon ground cinnamon
- In a separate medium bowl, add in mashed banana, egg, brown sugar, vanilla extract and milk. Whisk to combine. Add in melted butter and whisk.1 medium very ripe banana, mashed, 1 large egg, 3 tablespoons light brown sugar, 1 teaspoon vanilla extract, ¾ cup whole milk, 3 tablespoons unsalted butter, melted and cooled down slightly
- Add in the dry ingredients, whisk briefly until just combined. Folding in the chocolate chips.⅓ cup mini chocolate chips
- Heat a nonstick pan over medium heat. Pour about ⅓ cup for each pancake and cook until you see the bubbles forming on top, flip with a spatula and cook the other side too until both sides are golden brown. Continue with the remaining batter.
- Serve warm with maple syrup, banana slices and more chocolate chips. You can also top the pancakes with chopped pecans, if desired.
