Ingredients
- 1 sheet frozen puff pastry
- 2 cups sour cherries, pitted - cut in half (optional)
- ⅓ cup granulated sugar - 66 grams
- 2 tablespoons cornstarch
- pinch of salt
- 1 teaspoon vanilla extract
- egg wash: 1 egg + 1 tablespoon water, whisked together
- 2 teaspoons granulated sugar - optional, for topping
Instructions
- Let the puff pastry thaw on the counter for about 30-40 minutes. It should still be cold but you should be able to unfold without breaking it.
- Line a baking sheet with parchment paper.
- In a bowl, add in pitted cherries, cornstarch, sugar, pinch of salt and vanilla extract. Stir to coat. Set aside.
- Once the puff pastry is thawed, lightly flour your surface and place the sheet on top. Using a rolling pin, gently roll the pastry just to smooth creases. Trim off corners (optional). Place the puff pastry on the prepared baking sheet.
- Pour the cherry mixture in the center, leaving about 1 to 1 ½ inch border. Fold the edges. Place the galette in the freezer for 10 minutes. This step helps the dough keep its shape. Preheat the oven to 375°F (190°C).
- Brush the edges with egg wash and sprinkle with sugar, if using.
- Bake in the preheated oven for 25-35 minutes or until the filling is bubbling and the crust is golden. Let it cool down for at least 30 minutes so that the filling has time to set. Serve warm or at room temperature.
Notes
Can I use frozen sour cherries instead of fresh?
Yes! Let the frozen cherries thaw and discard the juices before using (or the filling will get too watery).
